We prefer this dish on the crunchy side - so we throw about a cup or so of wasabi peas (you will see the original uses wasabi powder), a little dijon and a dash of fish seasoning into the food processor. Then add 2 tbsp of EVOO to make a paste. Apply the mixture to the salmon. If possible, let the salmon rest for a short while to absorb some of the flavors. Place Salmon on a baking sheet (on parchment paper will save on clean up!) and bake at 375 degrees for about 10 - 20 minutes (i.e. until it looks cooked through).
As shown, we served it that particular night with bok choy: lightly steamed and then lightly sauteed with garlic and a dash of fish sauce.
The girls are fish eaters, but they will not eat salmon. They get a small tilapia minus the wasabi crust.
Enjoy and have a lovely weekend!
